Hi I’m Nicci, I’m a mum of 4, a wife and a passionate cake and cookie LOVER! I create customised cakes, cupcakes and cookies for all sorts of occasions. I’m located in the South East suburbs of Melbourne and I ship cookies Australia wide!
I’ve been running my small boutique business from my home kitchen for a number of years and during this time have developed a HUGE cookie obsession. Although I love to create gorgeous unique cakes for my clients, I have a real love for cookies. I am also obsessed with painting, and most of my cakes and cookies will involve hand painted elements. You can guarantee that there is a great deal of love put into each and every one of my sweet creations, which is why I feel my work is so sort after.

What did you have for breakfast this morning?
Breakfast for me is a cup of tea and a museli bar , I know that I should have a proper breakfast but, it works for me!
Do you have a guilty pleasure snack?
I would have to say chocolate, just a plain old block of cadbury diary milk!!
How long have you been Cake Decorating for?
I’ve been doing cakes and cookies for a good 5 years but I’ve loved baking for a very very long time!
Why did you choose Cake Decorating?
I think it kind of chose me! I’ve always been attracted to it, even back when I was younger, but everything just fell into place after I had my eldest daughter!
In times of doubt, what do you do to get back into your creative zone?
Ohhhhh, this is a really great question as I am a huge self doubter. I have perfectionitis, and I’m always having bouts of doubt, am I good enough, will people like what I do, is this really my thing. I think you just have to stay true to yourself, there will always be bad days but you just have to leave that behind and get up the next day and start all over again. If I’m in the middle of an order and start looking at what I’m doing and think ‘oh my goodness, this is just crap, I hate it’ and I can tell you, this happens VERY often, I will walk away from it for a little while, because if I don’t, the self double just keeps growing. I generally find if you’ve been working on something for a while (which I do a lot as my work is predominately hand painted and that takes quite some time), sometimes you just need to walk away and not look at it for a while, sometimes I come back it it the next day (providing I have the time for that), or even just an hour later, it makes a huge difference to your mindset! Another good thing I sometimes do is just scroll through my insta feed and look at all the things I’ve already done, a bit vain I know, but it just realise that ‘hey, hang on a minute, I can do it’
Where did you learn your Cake Decorating skills?
Most of my skills are self taught, and I’ve done a few workshops along the way. Lots of trial and error too, which I think is the best way to learn!
What is your typical day like, what does it entail?
It can vary so much depending if I have cakes or cookies to do or both. Generally it starts early getting up with the my kids, breakfasts, school lunches, etc, etc. Once all that’s done with I can start work. I plan my day in shifts, so I have a morning shift which is after the kids go to school till lunchtime, so I make sure that I do tasks that I know I can finish in that time. I make sure to give myself a quick lunch break, which I never used to do, then I go into my afternoon shift which runs from lunchtime through to 3pm so I’m done for school and kinder pick up. By the time I get back from that it’s all about the kids up till dinner, once dinner is finished I then head into my night shift, lol! And I generally work through till at least midnight every night! I’m exhausted just typing that!! But when you run a business from home, you’re always working!
We know Edible Art Paint is a medium you use, what do you love about it?
Oh my gosh, where do I start… firstly Miranda is hands down the best most driven human being, I just love her! She is so clever, and her paints have certainly changed the industry for sure! It’s like liquid gold.
My favourite way to use the paint is like a watercolor, so mixed with rose spirit and it’s just such a joy to use. And I now cover all my cakes in white fondant (never coloured) and I paint my based with edible art paint, so much easier and cleaner than colouring fondant! The range of colors is fantastic and I know there is plenty more to come!
What is your #1 piece of advice for the newbies in Cake Decorating?
It would have to be practice, if you want to be good at something, you need to do it every day over and over. And don’t be disheartened if something doesn’t work out, embrace it (although I know it’s hard at the time), but make notes as to why it didn’t and think of ways try it differently, and just keep trying till you get it!
Also, don’t compare yourself (I should take my own advice on this one too!), everyone is on their own journey and at different places on that journey, and comparing yourself to that/them is not going to help you and will could your mind and impact on your creativity! Find what you love, and just do it!
Who is your inspiration in the Cake Decorating world?
Oh gosh, there is so many, too many to list here, but I find inspiration all over, not just cake and cookie decorators but a lot of painters, artists (Jane Davenport), stylists (Studio DIY, Sugar and Cloth) and letterers and another fav would be illustrators. I find inspiration everywhere, it probably drives my husband crazy as I always have to stop and look at things, take photos of stuff, etc, etc. Of course I would have to say Alisha from Sweetbakes , Amanda from Sugar Sugar Cake School and Peggy Porschen. Peggy was probably one of my first huge cake/cookie crushes and where my journey started! And then theres all the cookiers, so many talents from all over the world! So it’s safe to say, ALOT of things/people inspire me, lol!
