Kaitlyn Wait – Founder of Cakes by Georgia and Ella

Hey it’s Kaitlyn here from @georgiaandellaxx

What did you have for Breakfast this morning?
After managing to get 2 kids fed and watered, I attempt to grab a couple of pieces of toast with honey. Apparently, the kids wanted this too and proceed to steal half of it. At least they didn’t steal my cup of tea! This reminds me, I’m hungry….

How long have you been Cake Decorating for?
I became interested in cake decorating about 3 years ago. I decided I wanted to create something special for my best friend on her 30th  birthday. I had NO idea, but I was determined! I decided to grab some cakes from woollies and some pre made buttercream and have a go. I decided to attempt a 2-tier cake (yep, you heard that right lol), chucked it together with absolutely NO supports (yep, you heard that correctly too) and then proceeded to travel 2 hours with the cake with it balancing on my lap. YEP, you heard that right. Haha. But guess what, I made it! I guess the fact that this wasn’t a disaster encouraged me to go further. And plus, I’d had SO much fun! I now bake my own cakes and make my own buttercream. I now put supports in my 2tier cakes and place my cakes in the footwell of my car. And 3 years later I’m still having so much fun!.

Why did you choose Cake Decorating?
I’m actually first and foremost a Primary School Teacher and I absolutely love it. I don’t own a business and I only bake for fun and for family and friends. BUT I choose cake decorating as a hobby because it’s fun, it’s therapeutic, and I absolutely love getting creative. There is something so satisfying about producing something that just tugs at your heart, or that puts a smile on the face of someone you care about. And whilst I’m sure it will send me broke (haha) I absolutely love it!

In times of doubt, what do you do to get back into your creative zone?
I find myself thinking about cake design at the most random times. I’ll often think of cake designs as I lie in bed at night before I go to sleep. If you scroll through my Instagram feed, you’ll see a multitude of cakes that have been born out of something random that has inspired me. I’ve been inspired by random art works that I’ve seen on Café walls, quotes that caught my attention, memories, as well as a quirky fireplace that was at a random Air BnB that we stayed at. Often my husband will catch me taking photos of random things and claiming “this is going to be a cake!” My phone is full of random screen shots and photos I’ve taken along my journey. Many of them will be turned into a cake eventually! So when I’m in doubt and finding it hard to get back into my creative zone, I’ll have a look at my stockpile of inspiration and see if it helps. Or else when I’m out and about next, I’ll look for inspiration. This often helps!

Where did you learn your Cake Decorating skills?
I was gifted a workshop with Don’t Tell Charles when I was just beginning my journey. It was fantastic and helped me perfect the basics! But since then I have been otherwise self taught whether it be through hands on trial and error or through watching other cakers on Instagram and You Tube. There really is a wealth of information out there!

What is your typical day like, what does it entail?
My typical day either involves running after my two little ones and trying my best to fit in getting creative with cake (where I can) or teaching at school! (well, at the moment I am teaching remotely!) Nap time often = caking time! And caking time = happy time!

We know Edible Art Paint is a medium you use, what do you love about it?
I absolutely love Edible Art Paint! It’s incredibly versatile but most importantly, it works really well on buttercream cakes – and that is generally the type of cake I create! I really love that you can mix the colours to create your own unique colours too.

What is your #1 piece of advice for the newbies in Cake Decorating?
If you’re a hobby baker like me who is thinking about starting up as a business, HAVE FUN! For goodness sakes, just. have. fun! Try different techniques, try different looks, splash on some different colours, use all your different piping tips and find your groove!! Find your look! Practise those skills. Bake those cakes. Bake them again. Feed your friends, family and neighbours. Get a dummy cake or two and practise on that. Find what type of cake makes you happy and fulfils you! And aside from all of this, make sure that you have the right tools! Invest in a good mixer, turntable and scraper.

Who is your inspiration in the Cake Decorating world?
This is SO difficult! Firstly, I have made some wonderful friends in the caking world –  friends who I have never met in person but talk to every single day and are a constant source of guidance, friendship and inspiration. Aside from these amazing ladies (who know who they are!), I wrote down quite a few names for this and wanted to write down tonnes more! But here are 3 who I think are just AMAZING and I just drool over their work. @eumicakes just has STUNNING palette knife work and is a constant inspiration to me when it comes to design and colour choice. @sweetheatheranne is another out-of-this-world talent who is such an inspiration! @lila.cakeshop is just amazingly talented with all of her buttercream piped florals.

Who is your inspiration out of the Cake Decorating world?
My family and friends are constant sources of inspiration. But if I had to name some other sources – @theuncommonflorals has the most beautiful artwork!! Her work is certainly on the list to create a cake inspired by her masterpieces! @brionymachinceramics makes phenomenal ceramic art and I could watch her create for hours. @hannahroseillustrations has such divine artwork!
